Luke Holder

CHEF

Born in the UK and raised in Dubai, Lime Wood’ s Hartnett Holder & Co. Chef Director, Luke Holder has a wealth of culinary influences and experience.

The restaurant opened in 2013 as a relaxed, stylish and comfortable restaurant – full of character, yet unpretentious, much like Luke and Angela who are famed for their informal, grounded style of cooking and their respect for local produce. With both chefs embracing the philosophy behind great Italian food, the seasonal menus centre around locally sourced British ingredients to make distinct variations of Italian classics.

In keeping with the times, Angela and Luke aim to ensure that nothing becomes outdated in the restaurant, resulting in a daily changing menu for longer staying guests, quality produce and better awareness for the health of their team. A firm advocate for staff health and wellness, Luke ensured that the Lime Wood team could eat as well as the guests, stopping the practice of buying produce for staff food and only using the food they were serving to the guests. The shift away from the deep fried food culture, (so often experienced in hotel staff canteens) was instrumental in upholding Luke’s ethos of “we are what we eat”.
