Deli Dish of the Day : Non-alcoholic Cordial

At Dartmouth Food Festival, it’s not all about the professional chefs. This year we are once again hosting a competition to find Dartmouth’s best home cooks.Paul Greenfield and Alan Price, who run Smith Street Deli have set a challenge to discover the best non-alcoholic cordial.

With a new interest in preserving food we have noticed many new and innovative recipes for making non-alcoholic cordials, using fruits, sometimes combined with herbs and spices.

Not made cordial before?  Don’t worry, you will find them relatively quick and easy to make.  Ideally we are looking for something light and refreshing - not too sweet – a world away from the typical commercial product.

Bring your cordial between 12 and 2 pm to the Community Cafe in the corner of the Old Market Square on Sunday 22nd October.  Please name your cordial and use a glass bottle/container (we are a plastic bottle free Festival) ready for us to dilute with water at the judging point.  Remember to label it with your name, mobile/home telephone number and flavour, and feel free to advise on a recommended ratio of cordial to water to get us started.

There are lots of unique recipes in books for cordials and some fun and innovative ideas if you search on the Internet – or why not just invent your own from scratch?  

Examples of ingredients are:

Fruits: apples, pears, rhubarb, blackberries, pomegranates, citrus fruits, summer fruits….

Herbs and spices: rosemary, ginger, vanilla, lavender, sage, cardamom

Judging: We have two judges this year.  Serin Aubrey, who many local people will know as the joint proprietor of ‘Dartmouth Fine Foods’.  In a former life Serin was a highly successful chef in both London and Dartmouth.  Our other judge is Paul McNabb.  Paul divides his time between London and Dartmouth.   He is a successful entrepreneur, a trained chef and sommelier, and is passionate about pursuing all things food, wine and beer related.

Judging will take place at 3.00 pm and the winner announced at 4.00pm.  

You can collect your bottle at any time between 4 and 4.30 pm.

A fabulous foodie hamper will be awarded for each day’s winner.
