Neil Borthwick

Neil Northwick, Head Chef of the Merchants Tavern, a neighbourhood tavern in the heart of Shoreditch, London. Born in Edinburgh, Neil fell in love with food while up to his elbows in soap suds – washing pots at the age of 14. From this modest start, he has since honed his skills at The Connaught, Michel Bras, Maison Pic and The Square, amongst others, and went on to win the Nestle Toque D’Or in 2000.

Time spent as Sous Chef with Michel Bras had a strong influence on Neil, and his Merchant’s tale was a fundamental inspiration for Neil. Viewing chefs as ‘merchants of good fortune’, Michel’s idea is that chefs are in a privileged position, able to use their skills and craft to create excellent food for their patrons – a concept that is fundamental to Neil’s approach at Merchants Tavern.
